Crispy bacon and fresh parsley finish each bowl with delicious texture and freshness.

This cozy soup is simple enough for a weeknight meal but flavorful enough to serve as a starter for a family dinner or gathering. The creamy texture, rich roasted garlic, and savory Parmesan make it especially satisfying, while the potato gives the soup natural body without requiring complicated ingredients.

Why You’ll Love This Recipe

There are so many reasons to add Creamy Roasted Garlic Soup to your comfort-food rotation. The roasted garlic provides incredible depth without an overpowering raw-garlic flavor, while the combination of Parmesan, cream, thyme, and chicken broth creates a wonderfully savory base. Crispy bacon adds a salty, crunchy contrast to the smooth soup.

This recipe is also convenient for meal prep and easy to customize. You can prepare a batch ahead of time, store it in the refrigerator, and gently reheat it when you’re ready to eat. It’s a great choice when you’re searching for easy soup recipes, cozy dinner ideas, or delicious dinner recipes that feel homemade and satisfying.

Health Benefits of This Recipe

Garlic is the star ingredient in this soup and offers plenty of flavor along with naturally occurring sulfur compounds. Roasting garlic makes it softer and sweeter while preserving its delicious character. The recipe also includes onion and parsley, adding more plant-based ingredients, flavor, and variety to the meal.

Potatoes provide carbohydrates and nutrients such as potassium, while Parmesan contributes protein and calcium. Chicken broth adds a savory foundation and can provide additional protein depending on the variety you choose. Because the recipe also contains cream, butter, Parmesan, and bacon, it is a rich dish, so enjoying it with fresh vegetables or a crisp salad can create a more balanced meal.

What Makes This Recipe Dinner

Creamy Roasted Garlic Soup can easily become the centerpiece of a comforting dinner when paired with the right sides. The potato and cream make it satisfying, while Parmesan and chicken broth add savory richness. Adding crispy bacon on top gives the soup extra texture and makes each serving feel hearty and indulgent.

For a higher-protein dinner, serve the soup with grilled chicken, turkey meatballs, a protein-packed salad, or cottage cheese toast. You can also add a side of roasted vegetables or a simple green salad for freshness. These combinations make the soup especially useful for anyone looking for cozy but practical weeknight dinner ideas.

Tips & Variations

For the best flavor, give the garlic enough time to roast until the cloves are soft, fragrant, and easy to squeeze from their skins. Avoid burning the garlic because overly browned garlic can become bitter. When blending the soup, work carefully with hot liquid and blend in batches if you’re using a traditional blender.

There are plenty of ways to customize this recipe. Use vegetable broth instead of chicken broth for a vegetarian version, or leave out the bacon and replace it with crispy chickpeas, toasted seeds, or extra Parmesan. You can also add fresh thyme, chives, roasted cauliflower, mushrooms, or additional vegetables. For a lighter soup, reduce the cream or replace part of it with a lighter dairy option.

How to Store & Meal Prep

Allow leftover soup to cool before transferring it to an airtight container. Keep it refrigerated and enjoy it within a few days for the best quality. Store crispy bacon and fresh parsley separately when possible, then add them just before serving so they retain their texture and freshness.

For longer storage, the soup can be frozen, although dairy-based soups can sometimes change texture after thawing. For the best results, consider freezing the blended soup before adding the cream and Parmesan. Thaw it in the refrigerator, reheat gently on the stovetop, then stir in the dairy and adjust the consistency with a little broth if needed.

Common Mistakes to Avoid

One of the biggest mistakes is rushing the garlic-roasting process. The roasted garlic is responsible for much of the soup’s signature flavor, so make sure the cloves become completely tender before adding them to the soup. Another common mistake is adding too much salt too early. Parmesan, bacon, and chicken broth can all contribute saltiness, so taste the soup near the end before making final adjustments.

Be careful when blending hot soup, especially in a traditional countertop blender. Fill the blender only partially, work in batches, and follow safe blending practices. Finally, avoid aggressively boiling the soup after adding the cream and Parmesan. Gentle heating helps maintain the smooth, creamy consistency.

Creamy Roasted Garlic Soup is rich, comforting, and full of deep garlic flavor, Parmesan, and crispy bacon. A cozy, satisfying soup perfect for chilly days.

Ingredients

  • 3 large heads fresh garlic

  • 1 tablespoon olive oil

  • 1 tablespoon unsalted butter

  • 1 large onion, peeled and roughly chopped

  • 1 teaspoon dried thyme

  • 1/2 cup dry white wine

  • 4 cups unslated chicken stock or broth

  • 1 large russet potato, peeled and cubed small

  • 1/2 cup heavy cream

  • 1/2 cup freshly grated Parmesan cheese

  • salt and freshly ground black pepper to taste

  • 2 strips bacon, cooked crisp and crumbled

  • freshly chopped parsley, for garnish

Instructions

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Trim 1/4 inch off the top stem end of each garlic bulb, and remove the loose outer papery layers. Place cut sides up on a piece of foil large enough to hold all of the garlic heads. Drizzle with olive oil. Wrap the foil tightly around the garlic heads, and place the foil packet upright in a small baking dish.
  • Roast in the preheated oven until tender and fragrant, 40 to 60 minutes. Set aside to cool.
  • Meanwhile, melt butter in a soup pot over medium-high heat. Add onion and thyme and saute until onion is translucent, 3 to 5 minutes. Stir in white wine, and cook for 3 minutes.
  • Reduce heat to a low boil and stir in chicken stock and potatoes. Cover the pot, and cook until potatoes are tender, 15 to 20 minutes.
  • When garlic is cool enough to handle, squeeze soft cloves out of the skin, smash into a creamy paste with a fork, and stir into the hot soup.
  • Use an immersion blender to puree soup until smooth. If using a regular blender, don’t fill the container to the top. Allow the soup to cool a few minutes, add half to the blender each time. Hold the lid down with a towel while blending to avoid the possibility of soup splashing out, and return soup to the pot.
  • Stir in cream and Parmesan, and season with salt and pepper. Simmer soup for another 5 minutes. Top with bacon, sprinkle with parsley, and serve hot.

Notes

  • The garlic may be roasted the day before. If served as an appetizer, this will make 6 servings.
