Health Benefits of This Recipe

While these burgers are a comfort food favorite, they also provide valuable nutrition. Ground beef is an excellent source of high-quality protein, which helps support muscle growth, repair, and long-lasting fullness. It also contains important nutrients like iron, zinc, and vitamin B12 that contribute to energy production and overall health.

The onions add antioxidants and natural sweetness, while cheese provides calcium and additional protein. You can easily make this meal a little lighter by choosing lean ground beef, serving it with a fresh salad, or using whole wheat buns. With balanced portions and wholesome sides, these burgers can absolutely fit into a well-rounded lifestyle.

What Makes This Recipe Perfect for Dinner

These Barbecue Bacon Burgers make an excellent dinner because they’re filling, flavorful, and satisfying enough to keep everyone happy. Packed with protein and served with your favorite side dishes, they create a complete meal that’s perfect for busy weeknights, relaxed weekends, or outdoor family gatherings.

Another reason they’re ideal for dinner is their versatility. Pair them with crispy fries, grilled vegetables, coleslaw, potato salad, or a fresh garden salad for a meal that feels both comforting and complete. Whether you’re feeding picky kids or hungry adults, these burgers are always a winning choice.

Tips & Variations

For the juiciest burgers, avoid pressing the patties while they cook, as this releases flavorful juices and can dry out the meat. Using freshly ground beef, thick-cut bacon, and a good-quality barbecue sauce will make a noticeable difference in both texture and taste. Toasting the buns before assembling also helps prevent them from becoming soggy.

There are endless ways to customize these burgers to suit your taste. Try Pepper Jack, smoked cheddar, or Swiss cheese for a different flavor profile, or add jalapeños, avocado, caramelized mushrooms, crispy onion strings, or pickles for extra texture and flavor. You can even swap the barbecue sauce for a spicy chipotle version if you enjoy a little heat.

How to Store & Meal Prep

Leftover burger patties can be stored in an airtight container in the refrigerator for up to 4 days, making them perfect for quick lunches or dinners throughout the week. For the best results, store the buns, bacon, onions, and toppings separately so everything stays fresh and maintains its texture.

These burgers are also great for meal prep. Shape the patties ahead of time and refrigerate them until you’re ready to grill, or freeze uncooked patties for up to 3 months. When reheating cooked burgers, warm them gently in a skillet or oven to keep them juicy, then assemble with freshly toasted buns and toppings for the best flavor.

Common Mistakes to Avoid

One of the biggest mistakes is overcooking the burgers, which can leave them dry and tough. Using a meat thermometer helps ensure perfectly cooked burgers every time. It’s also important not to flip the patties too often, as allowing them to develop a nice crust creates better flavor and texture.

Another common mistake is using too much barbecue sauce too early, which can burn over high heat. Instead, brush on thin layers during the final stages of grilling to create a flavorful glaze. Finally, don’t skip toasting the buns—this simple step adds extra texture and helps keep the burgers from becoming soggy.

Make the best Barbecue Bacon Burgers with juicy beef, crispy bacon, melty cheese, and smoky BBQ sauce. Perfect for cookouts, family dinners, weekend grilling, and summer parties.

Ingredients

  • 2 pounds freshly ground beef chuck

  • Kosher salt and freshly ground black pepper

  • 6 slices thick-cut slab bacon, split in half crosswise (see note)

  • 1 onion, cut into 1/4-inch-thick rings

  • 1/2 cup barbecue sauce

  • 4 slices cheddar or American cheese

  • 4 sturdy burger buns

Instructions

  • Divide meat into four even piles and shape into burger patties about 1/2-inch wider than burger buns. Season generously with salt and pepper and set aside.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate.
  • Place bacon and onions in between hot and cool sides of grill and cook, turning occasionally, until surface of bacon is bubbling but not yet crisp and browned, and onion is lightly softened, about 15 minutes total.
  • Place burgers directly over hot side of grill and cook until well charred, about 2 minutes. Flip patties and brush with sauce. Cook on second side until well charred, about 2 minutes longer, brushing with sauce occasionally. Flip burgers again, transfer to cooler side of grill, brush with more sauce, and continue to cook, brushing with sauce occasionally, until patty registers 125°F (52°C) to 130°F (54°C) on an instant-read thermometer for medium rare, about 5 minutes total, or 135°F (57°C) to 140°F (60°C) for medium, about 6 minutes total. Top each burger patty with 1 slice cheese, then transfer to a large plate and tent with aluminum foil.
  • Brush bacon with barbecue sauce and place directly over hot side of grill, sauce-side down. Brush top with barbecue sauce. Cook until well charred, about 1 minute. Flip and cook until second side is well charred, about 1 minute longer. Top each burger patty with three pieces bacon, then top each with a couple of slices of onion.
  • Toast buns directly over hot side of grill until browned, about 30 seconds.
  • Place bottom buns on a cutting board. Transfer patty/bacon/onions to bottom bun (see note). Brush top bun with barbecue sauce and close sandwich. Serve.
